Sunday – Pancakes
Pasta with veggies

Monday – split peas, cornbread and a veggie
Oatmeal, apples, cinnamon, toast and fresh fruit

Tuesday – Veggie Pot Pie with Biscuit top
Fruit toast and bean cakes

Wednesday – Chili, Cornbread or biscuits, Veggies
Grits, Greens, Toast and fruit

Thursday – Pasta with veggies
Blueberry Pancakes

Friday – Leftovers
Biscuits and gravy, fried potato, sautéed mushrooms

Saturday – Waffles
Hay Stacks

Sunday – Leftover Waffles
Garbanzo Patties in taco shells with guac, salsa, lettuce, tomato and cucumber

    I’m soaking beans today to make a soup and I was wondering if coconut milk is okay for you to eat? If so, I have the most wonderful veggie/bean soup recipe that I’ll share if you’re interested.

    • Coconut is out as it’s considered a tree nut. But I’m learning to make all sorts of milk replacements. I’d love to see the recipe. 🙂
